Technical Quarterly is currently seeking manuscripts for special industry issues.

Non-Alcoholic and Low-Alcohol Beer Production

We are seeking submissions exploring the science, technology, and production of non-alcoholic (NA) and low-alcohol beer. As consumer demand continues to grow, brewers are developing innovative approaches to produce beverages that deliver the flavor, quality, and drinking experience consumers expect while meeting alcohol reduction targets.

Relevant topics include:

  • Yeast selection and fermentation management for NA and low-alcohol beer
  • Flavor development, retention, and optimization
  • Product stability and shelf-life considerations
  • Microbiological risks and quality control
  • Packaging and labeling considerations for NA and low-alcohol products
  • Brewery case studies and lessons learned from commercial implementation

Both applied case studies and methodological work are welcome.

 

Emerging Authors in Brewing Science

This issue is dedicated to graduate students, postdoctoral researchers, and early-career professionals.

We are particularly interested in work that:

  • Bridges academic research and production relevance
  • Demonstrates strong experimental design and clear technical contribution
  • May represent thesis or early-career research translated for an industry audience

Submissions from first-time authors are strongly encouraged.

Meet the Editor-in-Chief

Dr. Harmonie Bettenhausen is the Editor-in-Chief of MBAA Technical Quarterly and Faculty at the James B. Beam Institute for Kentucky Spirits at the University of Kentucky.

Her work focuses on brewing, distilling, fermentation, small grains, malt quality, and the chemistry that connects raw materials to finished products. Harmonie’s background spans food science, biochemistry, metabolomics, brewing, and applied beverage research. She works closely with students, researchers, brewers, maltsters, distillers, growers, and industry partners to better understand how ingredients and processes shape quality, flavor, performance, and consistency.

A Message to Contributors

"As editor, I am especially interested in making TQ a welcoming home for useful, applied, and technically sound work from across the brewing community. This includes technical notes, case studies, practical problem-solving pieces, and student work that connects research with day-to-day production."
