Abstract
Dissolved oxygen (DO) meters allow brewers to minimize DO in the beer, which helps to protect the flavor and extend the shelf life of the beer being produced. Large breweries will have many in-line DO meters, package analyzers, and numerous portable meters, while a small brewery may have just one portable; however, the challenge of correctly using DO meters is exactly the same in all breweries. This paper does not discuss new findings or discoveries—it is written simply to help users in the brewing industry understand use of portable DO meters and to summarize best practices.
