​Keep It Simple and Smart: Results from a Scientific Optimization of the Lauter Tun Design

Abstract
In this article a new lauter tun design is presented with which the outlet area can be increased to 2.5 m2 per run-off pipe. The run-off pipes are no longer distributed uniformly across the bottom of the lauter tun but are integrated into the bottom directly above a single lauter ring. This design results in less effort and lower costs for the lauter tun production and significantly reduces the water volume and cleaning chemicals required. Furthermore, the required performance and wort qualities are achieved safely, which was statistically validated by the results of a scientific work.
