Join this presentation to gain a comprehensive overview on roasting grains and malts. Beginning with an introduction to both the process and the equipment used in commercial malt roasting operations, the attendee can learn about the basic principles of roasting as well as how the roaster is constructed and plants are set up. In the second part of his talk, Sebastian Wolfrum will continue to go into further detail on how the various caramels and roasts are handled before, during, and after roasting to arrive at the desired flavor and color profiles. The talk is focused on technical and handbook knowledge representative of industry standards. However, the presenter will add to that by including practical examples of running a roasting plant to fill in and address the "how-to" that is missing in the commonly available literature.

Sebastian Wolfrum is the executive brewmaster for Capitol Broadcasting Company with his main focus on the Rocky Mount Mills' Brewmill & Bull Durham Beer Company. Born and raised in Germany, he earned his certification as a brewer and maltster with Ayinger Brewery outside of Munich in 1999. Continuing his brewing career in the United States, from 2006–2013 Sebastian was director of brewing operations for the second largest craft brewery in North Carolina. As a founding member of the North Carolina Craft Brewers Guild in 2008, he continues to be very involved in the affairs of the small breweries in the region. By 2012, he added a Certificate in Distilling from IBD, London. On the side, Sebastian founded Epiphany Craft Malt in Durham, North Carolina, providing an integrated regional supply to brewers, distillers, and other sprouted grain ventures, in 2015.
