To Øl Brewery has been working with Christian Hansen on brewing with SmartBev™ NEER® yeast for a number of years now. During that time, they have developed a variety of different beers with this yeast. The first is a fairly typical 0,3% non-alcoholic IPA, the second is brewing a very similar beer but by keeping the green beer in a continuously aerobic state, achieving 0,0% ABV. Trials for a third beer using the same yeast explored its suitability for a non-alcoholic lager.

The webinar will cover recipe development, troubleshooting, and general advice for non-alcoholic beer production. We will also evaluate the various methods of non-alcoholic brewing and discuss some of the pros and cons that aren't necessarily in the available literature.

Note that the presenter is currently brewing in Europe, and while the differences in legal requirements between Europe and North America will be discussed, the term "non-alcoholic" will be used throughout the presentation to refer to beers with an ABV below 0,5%.

Tamar Banner

Tamar Banner is a veteran of the craft beer industry, having started brewing professionally in 2001. In 23 years of brewing, she has worked in the brewhouse, cellar, packaging, quality, and management. Since November 2020, she has been the head brewer at To Øl ApS in Svinninge, Denmark, responsible for managing brewing, packaging, QA, production planning, and new product development. Prior to To Øl, she brewed at Harpoon Brewery in both Boston and Vermont, New Belgium Brewery in Fort Collins, Colorado, and BrewDog Brewing Company LLC in Canal Winchester, OH. As a Certified Cicerone, she has a passion for beer/food pairing and speaks regularly at beer dinners and events. She holds a bachelor’s degree from Yale University and a master’s degree in Brewing and Distilling Science from Heriot Watt University in Scotland. She has been on the board of both the Rocky Mountain and Midwest chapters of the Master Brewers Association of the Americas and is a member of the Pink Boots Society. In her spare time, she loves experimenting with other forms of fermentation and makes her own cheeses at home.
