The bible on brewing beer with honey has not been written, until now. With honey’s use growing in popularity amongst brewers, the National Honey Board recently developed a research project to analyze and document how honey impacts beer when added at various stages of the brewing process. This research was presented, along with an in-depth look at the composition of honey and how its various carbohydrates, polyphenols, enzymes and more impact brewing.
