Comparing Different Rinsing Methods Used During Cleaning-in-Place of Process Vessels to Minimize Water Use

Abstract
Process vessels such as fermentation or aging tanks are usually equipped with stationary spray balls or rotating spray heads to dispense both detergent solution and rinse water during cleaning-in-place (CIP) procedures. Rinsing removes soil or traces of detergent and is performed either by spraying water continuously or by a series of short water bursts until the tank is free of any contamination. Rinsing during CIP can consume large quantities of water. Water conservation and the cost of water are important incentives for breweries to find ways to minimize its use. Theoretical modeling of continuous versus burst rinsing through stationary spray balls showed that burst rinsing can be considerably more efficient in the use of water. The operation of typical rotary head machines is also analyzed qualitatively to determine their effectiveness during rinsing, especially when compared with stationary spray balls.

Los recipientes del proceso, tales como los tanques de fermentaci�n y de maduraci�n, generalmente est�n equipados con rociadoras esf�ricas estacionarias o cabezales rociadoras rotativas para rociar el equipo con soluci�n detergente o agua de enjuague durante los procedimientos de CIP. El enjuague remueve suciedades o trazas de detergente y se efect�a rociando continuamente con agua o bien con una serie de r�fagas cortas de agua hasta que quede el tanque libre de cualquier contaminaci�n. El paso de enjuague puede consumir grandes cantidades de agua. Las cervecer�as deber�an buscar maneras de reducir este gasto, con el incentivo de reducir los costos y conservar agua. Modelos te�ricos han demostrado que el enjuague por r�fagas es considerablemente m�s eficiente en cuanto al consumo de agua. Aqu� tambi�n se analiza cualitativamente la operaci�n de diferentes cabezales rotatorios t�picos para determinar su eficacia para el enjuague en comparaci�n con aquella con esferas rociadoras estacionarias.
