Barley beta-Glucans and Their Degradation During Malting and Brewing

Abstract
Beta-glucan polymers originating from barley endosperm cell walls are one of the major concerns in the brewing industry. The amount and molecular weight of beta-glucans in malt affect brewhouse extract yield and wort and beer viscosities, as well as lautering, diatomaceous earth, and membrane filtrations. Barley beta-glucans are also associated with beer hazes. Precipitation and gel formation of beta-glucan polymers can be enhanced by factors such as ethanol concentration, and freezing and thawing, as well as by turbulent shear. Understanding the properties and degradation of beta-glucans and the aggregation mechanisms of these polymers helps brewers adopt preventative and corrective operations to minimize the beta-glucan-related processing difficulties.

S�ntesis
Los pol�meros de beta-glucano que originan en las paredes de las c�lulas de endosperma de la cebada es causa de gran preocupaci�n en la industria cervecera. La cantidad y el peso molecular de los beta-glucanos en la cebada malteada afectan las viscosidades del mosto y la cerveza, afectando as� las filtraciones en el lauter o y las filtraciones de cerveza con tierra diatom�cea o por membranas; tambi�n afectan el rendimiento del extracto en el cocimiento. Los beta-glucanos de la cebada tambi�n tienen que ver con la turbidez en cerveza. La precipitaci�n o formaci�n de gel de los pol�meros de beta-glucano puede ser propiciado por la concentraci�n de etanol y la congelaci�n y descongelaci�n repetidas, como tambi�n por efectos de corte (cizalla) causado por turbulencia. El conocimiento de las propiedades y los mecanismos de la degradaci�n de beta-glucanos y de la agregaci�n de estos pol�meros ayuda al cervecero adoptar medidas preventivas y correctivas para minimizar las dificultades en el proceso relacionadas con estos compuestos.
