CSS�A New Beer Stabilization Process

Abstract
The combined stabilization system (CSS) is capable of removing turbidity-forming protein and polyphenols in a single step. The CSS is a compact, skid-mounted, fully automated stabilization system consisting of a stabilization chamber, regeneration unit, and cleaning unit. The CSS stabilization chamber is completely filled with the CSS adsorbent, which is based on a high-grade, cross-linked, insoluble agarose with a particle size of 100-300 �. The adsorbent is permanently retained, making the dosing of precoat and feed suspension prior to each filtration unnecessary. The basic principle of CSS is that haze precursors of a protein and polyphenolic nature are adsorbed within seconds and then removed from the agarose during the regeneration with rock salt solution and caustic soda.

Sintesis
El sistema de estabilizaci�n combinada (SEC) es capaz de eliminar prote�nas formadores de turbieza y polifenoles en un s�lo paso. El SEC es un sistema de estabilizaci�n autom�tico compacto montado sobre patines; consiste de una c�mara de estabilizaci�n, una unidad de regeneraci�n y una unidad de limpieza. La c�mara de estabilizaci�n del SEC esta completamente lleno con el adsorbente SEC; este se compone de una agarosa insoluble de enlaces cruzados de alta pureza con un tama�o de part�cula de 100-300 �. El adsorbente es retenido de manera permanente, lo que hace innecesario el paso de precapa y de alimentaci�n previo a la corrida de filtraci�n. El principio fundamental del SEC es la adsorci�n casi instant�nea de los precursores de naturaleza proteica y polifen�lica; estos son removidos de la agarosa durante la regeneraci�n con sal piedra y sosa c�ustica.
