Abstract
This article presents the first revision to the International Society of Beverage Technologists (ISBT) Carbon Dioxide Quality Guidelines and Analytical Procedure Bibliography. The quality guidelines and associated analytical procedures and reference material were developed by an industry subcommittee composed of representatives from the carbonated beverage and carbon dioxide industries. The guidelines were prepared to provide guidance on the key characteristics for the quality and purity of carbon dioxide used as a direct food additive in beverages. Analytical "referee" methods are also provided as well as supplemental information regarding proper sampling and testing. Additional reference material, as related to carbon dioxide handling and operational practices, is also included.

Sintesis
Este art�culo presenta la primera revisi�n a las pautas de calidad de anh�drido carb�nico y a la bibliograf�a del procedimiento anal�tico de la Sociedad Internacional de Tecn�logos de la Bebida (ISBT por sus siglas en ingl�s). Las pautas de calidad y los procedimientos anal�ticos asociados, y el material de referencia de literatura, fueron desarrollados por un subcomit� compuesto de representantes de la industria de la bebida gaseosa y del anh�drido carb�nico. Las pautas fueron preparadas para proporcionar una orientaci�n con respecto a las caracter�sticas m�s importantes de la calidad y pureza del gas carb�nico usado como aditivo alimenticio en las bebidas. Se indican los m�todos anal�ticos a ser utilizados en trabajos de arbitraje, as� como informaci�n adicional con respecto al muestreo y los ensayos; se incluyen referencias de literatura relacionadas con el manejo del anh�drido carb�nico y pr�cticas operacionales.
