Development of New Monitoring System in Packaging Line for Perfect Quality Control

Abstract
The reduction of oxygen uptake after beer filtration is quite impor-tant to improve the flavor stability of bottled or canned beer. It is pos-sible to continuously measure the dissolved oxygen content in beer before filling by in-line DO meter but the measurement of O2 pick-up at the filler is quite difficult. Normally, several packaged beer samples are selected and analyzed to determine the amount of oxygen pick-up. It is impossible, by this method, to assure the oxygen content of every bottled or canned product. We are developing a new monitoring sys-tem consisting of several in-line sensors such as O2, CO2, gas flow rate, pressure sensors and TV monitors. This system has enabled us to calculate the material balance of oxygen during the filling process. With the aid of a computer, the simulation of total oxygen content of canned beer has become possible and the correlation coefficient between the simulated value and the actually measured value of total oxygen content was more than 0.9. This monitoring system is also useful to find out the factors that affect the O2 pick-up and the practi-cal countermeasures that can be taken to reduce it.

Sintesis
SINTE �SIS La reducci�n de la toma de ox�geno despu�s de la filtraci�n de la cerveza es muy importante para mejorar la estabilidad del sabor de la cerveza embotellada o en lata. Es posible medir continuamente el contenido de ox�geno disuelto en la cerveza antes del llenado medi-ante un medidor en l�nea DO, pero la medici�n del contenido de O2 asimilado en la l�nea de llenado es muy dif�cil. Normalmente se seleccionan y analizan varias muestras de cervezas empaquetadas para conocer la cantidad de ox�geno que recogen. Mediante ese m�todo fuera de l�nea es imposible asegurar el contenido de ox�geno de cada producto embotellado o enlatado. Nosotros hemos tratado de desarrollar un sistema de monitoreo nuevo que consiste de varios sensores en l�nea tales como sensores de O2 , sensores de flujo de gas CO2 y sensores de presi�n as� como c�maras de TV que nos han per-mitido calcular el balance material de ox�geno durante el proceso de llenado. Con la ayuda de la computadora, la simulaci�n del con-tenido de ox�geno total de cervezas enlatadas se ha hecho posible y el coeficiente de correlaci�n entre el valor simulado y el valor medi-do actual del contenido de ox�geno total fue m�s de 0.8. Este sistema de monitoreo es tambi�n �til para encontrar los factores que afectan la toma de O2 y la contramedida pr�ctica que se puede tomar f�cil-mente.
