In-Line Plato Measurement in the Brewhouse

Abstract
Traditionally, the wort concentration in the brewhouse is controlled by measuring the gravity at a well-defined temperature by means of a float weight. This is done several times during the boiling process and followed by a final adjustment with water prior to fermentation. This method is associated with some degree of uncertainty due to evaporation and the personal touch of the individual brewer. Furthermore, boiling to a higher concentration than the target value and a subsequent dilution means that brewing capacity is wasted. Making use of in-line, temperature independent Plato meters, which connect directly to the brewery's process computer, adds necessary control capabilities when the brewing process needs to be optimized. By adding an in-line Plato meter to the brewkettle in a closed loop, continuous monitoring is possible. The boiling process can be stopped at the exact target value, resulting in higher brewing capacity and better quality of the end product. Furthermore, lautering can be optimized by adding control to the sparging, when an in-line Plato meter is included in the lautertun runoff. Adding of sparge water can be stopped at a time when the wort concentration has dropped to a level where transfer to the brewkettle is no longer feasible.

Tradicionalmente, la concentracion del mosto en la cerveceria es controlada midiendo la gravedad a una temperatura claramente definida por medio de un peso flotador. Esto se realiza varias veces durante en cl proceso de ebullicion y es sequido por un ajuste final con agua antes de la fermentacion. Este metodo esta asociado a un cierto grado de inseguridad debido a la evaporacion y cl toque personal del cervecero individual. Mas aun, al hervir a una concentracion mas alta del valor predeterminado y una subsequente diluicion, significa que la capacidad de coccion fue desperdiciada. AI hacer uso de medidores en linea de Plato, independientes de temperatura, que se conectan directamente a la computadora de proceso de la cerveceria, adiciona posibilidades de control necesarias cuando cl proceso de coccion necesita ser optimizado. AI adicionar un medidor en linea de Plato a la olla de coccion en un circuito cerrado, es posible el monitoreo continuo. EI proceso de ebullicion puede ser detenido en cl valor exacto predeten?ninado, resultando en un incremento de capacidad de coccion y mejor calidad del producto final. Adicionalmente, la filtracion en cl lauter puede ser optimizada al adicionar el control en cl remojo, cuando se incluye un medidor en linea de plato en la salida del lauter. La adicion de agua de remojo puede ser parada en cualquier momento, cuando la concentracion del mosto a caido a un nivel en cl cual la transferencia a la olla de coccion ya no es factible.
