Investigations of Flavor and Flavor Stability of Dark Beers Brewed With Different Kinds of Special Malts

Abstract
Dark beers were brewed sing varying ratios of dark malts, black malt and colored beer. High concentrations of the carbonyls 3-methylbutanal, 2-methylbutanal, phenylethanal and i-butanalwere found in beers brewed with dark malt kilned according to a specific withering scheme. These compounds, which contribute to a stale flavor inpale lager beer, are (in the given concentrations) responsible for an agreeable sweet malty flavor in dark beers. During the storage period of dark malt after kilning the concentrations of most volatile flavor compounds show an increase in the first 3 months and then decrease again. This means that the time after kilning at which dark malt is used for brewing has a great influence on the malt flavor as well as on the staling of dark beer. Best results were obtained when dark malt was stored before brewing for 3 months. Black malt has a totally different flavor composition in contrast to dark malt and results in dark beers with little malt flavor and lower flavor stability. The high concentrations of pyrazines found in black malt show a correlation with the intensity of a burnt flavor.

Se Hicieron cervezasoscuras utilizando varias ratas de maltas oscuras, malta negra y cervezacon color. Se encontraron altas concentraciones de carbonyls 3-metibutanal,2-metibutanal, feniletanal, e i-butanal en las cervezas hechas con maltasoscuras secadas de ac uerdo a un esquema especifico. Estos compuestos, quecontribuyen a dar un sabor a rancio en cervezas claras lager, son (en lasconcentraciones dadas) responsables de dar un sabor dulce agradable a maltaen las cervezas oscuras. Durante el periodo de almacenamiento de la maltaoscura despues de secada las concentraciones de la mayoria de elementosvolatiles de sabor muestran un incremento en los primeros 3 meses y luegovuelven a decrecer. Esto significa que el tiempo despues de secado/tostadode la malta en el cual se usa la misma para la elaboracion de cerveza tieneuna gran influencia en el sabor de la malta asi como en el tiempo de vidautil de la cerveza. Los mejores resultados se obtuvieron cuando la maltaobscura se almaceno por 3 meses antes de ser usada. La malta negra tiene una composicion de sabores totalmente diferenteen comparacion a malta obscura y resulta en cervezas obscuras con menossabor a malta y menos estabilidad de sabor. Las altas concentraciones depiracinos que se encuentran en maltas negras muestran una correlacion conla intensidad de un sabor a quemado.
