Abstract
The development of procedures and processes for the production of sterile filled, unpasteurized canned and bottled beer is described using the example of the Miller Brewing Company. Topics covered include the evaluation of methods by monitoring the microbiological stability of the packaged beer, the disinfection of packaging equipment and its surroundings, the development of "clean rooms" to maintain a more hygienic environment for packaging, the training of packaging line staff in hygienic techniques, the use of special working clothes to maintain hygiene and the sterilization of cans, bottles and closures.
