Theoretical and experimental investigation of a wort aeration system.

Abstract
A mathematical model of the wort aeration process, whereby the concentration of oxygen at saturation level, the rate of dissolution of oxygen into the wort, the oxygen concentration at various stages of the process, the time required for the dissolved oxygen concentration to reach its maximum value and the quantity of air required to achieve a specified final dissolved oxygen concentration can be predicted, is described together with its application in a study of an actual wort aeration system in a commercial brewery. The values predicted using the model were found to correspond quite closely to the actual data obtained during the experiments.
