Abstract
The present state of knowledge concerning the flavour of beer is summarised, including the chemical constituents responsible for individual flavour notes and how their interactions determine the overall character of a given beer brand; taste testing methodology (terminology and its development, common problems impairing the consistency and reproducibility of taste test results, consumer tests and their particular difficulties, and determining the taste threshold value of an individual substance); the historical development of beer flavour; and the role of distinctive flavour characteristics in the creation and marketing of "designer" beers.
