Advanced brewhouse technology taking oxygen under consideration.

Abstract
Individual steps of wort treatment are reviewed emphasising the prevention of oxygen pick up during processing. Some measures to improve efficiency and avoid oxygen intake are: (1) new type pre mashers reducing foam generation and even pumping with moyno pumps, (2) the use of partially deaerated brewing and sparging liquor, (3) introduction of the grist/water mixture from below into the mash tun, use of agitators only when these are fully liquid covered, (4) a design of agitators aiming at a reduction of shearing process, (5) separate pumps for mash handling and final mash pumping to enhance efficiency, (6) for lautering final mash pumping from the bottom, (7) improvement of lauter tuns by final mash pumping via a closed circular pipeline with 3 to 4 inches above the false lauter tun bottom, (8) addition of hot break to sparging water with a rotary raking machine.
