Continuous monitoring of sodium in wort.

Abstract
Brewers frequently use sodium hydroxide based cleaning agents. To minimize potential product loss due to sodium hydroxide contamination, an analyser has been designed with continuously monitors the sodium concentration in production worts. A sodium ion selective electrode responds to the sodium concentration in wort which has been sampled from a bypass stream, diluted with deionized water, and buffered at an alkaline pH. Continuous monitoring prevents further processing or blending or a contaminated brew, helps to pinpoint the exact origin of an accident and detects momentary caustic intrusions which may otherwise remain undetected.
