Abstract
Recently, 2 important trends have influenced the beer market: increased segmentation of the market and increased antialcohol propaganda. There have been successful efforts by brewers to segment the beer market with expansion inoo premium products, calorie reduced lines and special beverages. Antialcohol propaganda has increased interest in low alcohol beers. Methods of production of these beers include: fermentation with Saccharomycodes ludwigii; checked fermetation; high temperature mashing; dilution; the Barrell process; removal of alcohol by distillation; reverse osmosis. The most important factors in gaining acceptability of low alcohol beers is to ensure fullness of flavour.
