Abstract
Introduced at INTERBRAU '77 as a semi-technical unit, the filter is now under trial at the Nancy, France, Brewing School. At the industrial scale, stimulating results have already been obtained in mash separation. It might be a promising alternative to the conventional lauter tun and to the mash filter. A bright wort is obtained in 60 to 80 minutes, yielding 2 to 3% more extract. Spent grains contain up to 45 or 50% dry matter. Comparative wort and beer analysis for conventional and new mash filtration system are given together with a breakdown of savings.
