Concentrated wort processing method.

Abstract
After a brief description of mashing and fermenting concentrated worts, including economic aspects, the treatment of the water used for dilution is described in more detail. The dilution water is filtered through sand and gravel and activated carbon filters; it is ozonated to sterilise it and remove undesirable odours, heated, deaerated in a vacuum vessel (APV), cooled and carbonated to 1.5 to 2.0 volume carbon dioxide. The water is then stored in tanks which are kept at the same pressure as the deaerator. An analogue ratio blending system is used to blend the concentrated beer and water.
