Brewing applications of high performance liquid chromatography.

Abstract
The advances in equipment and column packings which have made high resolution liquid chromatography possible are discussed, and a comparison of liquid and other types of chromatography is presented. A survey of some of the columns and techniques currently available in high performance liquid chromatography is included together with applications of interest to the brewing industry. These latter are for the separation and detection of proteins, peptides and amino acids; nucleic acid, nucleosides and nucleotides; carbohydrates; lipids; polyphenols; hop components; and flavour compounds.
