Beer as Liquid Bread

Abstract
The histories of bread and beer are intertwined. There are some
similarities in their production: both are cereal-based industries, both
involve milling and fermentation stages, and issues such as protein
oxidation are common problems or opportunities. However, the production of
beer remains substantially more complex than that of bread. Analytically
the common origins of bread and beer mean that some components of beer,
such as B vitamin content, are not dissimilar to those of bread.

S�ntesis
Las historias de cerveza y pan est�n �ntimamente entrelazadas, aun
cuando la elaboraci�n de cerveza es sustancialmente m�s compleja que la
del pan. Ambas son industrias basadas sobre cereales, ambas cuentan como
parte de sus procesos la molienda y etapas de fermentaci�n y tienen
problemas comunes, tal como la oxidaci�n prote�nica. Los or�genes comunes
de cerveza y pan a veces surgen anal�ticamente, cuando vemos, por ejemplo,
que el contenido de vitaminas del complejo B de la cerveza tiene su
similitud con componentes del pan.
