A New Concept of a Microbrewery for Malting Barley Evaluation and Brewing Process Improvement

Abstract
Kronenbourg has developed a new concept of the microbrewery. All the tanks are mass-weighed. The design of the piping produces hardly any losses during transfers between tanks. The precision of weighing is 50 grams per hectoliter of wort (0.05%). The microbrewery batch capacity is 25 kg of malt. The reproducibility of extraction yield is about 99% when using the same process and the same raw material. All the transfers between vessels are driven by weight and volume (double checked), thus allowing a useful mass balance across the brewing process to be developed. The filtration step is monitored by pressure sensors. Filtration will soon be controlled using a mathematical model which incorporates previous experience. This microbrewery is particularly helpful in evaluating malting barley, defining optimal malt specifications, and modifying the brewing process to adapt to new malting barley lines.

Kronenbourg ha desarrollado, un nuevo concepto de micro cerveceria. Todos los tanques son pesados por masa. EI disefio de la tuberia practicamente no produce peridadas durante la transferencia entre tanques. La precision del pesaje es de 5o gramos por hectolitro, de mosto (0.05%). La capacidad por lote de la micro cerveceria es de 25Kg de malta. La reproducibilidad de rendimiento de extraccion es de aproximadamente 99% cuando se utiliza el mismo proceso y las mismas materias primas. Todas las transferencias entre tanquez son controladas por peso y volumen (control doble), permitiendo asi que se desarrolle un util control de masa en todo el proceso cervecero. La filtracion es monitoreada por sensores de presion. La filtracion sera dentro de poco controlada utilizando un modelo matematico que incorpora las experiencias previas. Esta micro cerveceria es particularmente util para evaluar la eevada para maltear, definir las especificaciones optimas de la malta, y modificar el proceso cervecero para adaptarse a las nuevas lineas de eevada para maltear.
