Cost Effective Choice of Raw Materials for Beer

Abstract
Breweries all over the world focus on being cost effective while still keeping or improving quality. Although many efforts have been made to reduce production costs there are still economical and quality improvements to be gained by optimizing the use of raw materials. Various possibilities for choosing raw materials to give the right wort composition are presented. Special attention is given to the opportunity for using well defined, cheaper raw materials in combination with tailored blending of brewing enzymes. Examples will be given from industrial trials demonstrating that high quality beer can be made using less expensive under-modified malt.

Las cervecerias alrededor del mundo se enfocan en ser efectivas en cuanto at costo mientras mantienen o mejoran la calidad. A pesar de que se han hecho muchos esfuerzos para reducir los costos de produccion todavia hay mejoras de economia y calidad que se pueden ganar al optimizar el uso de materias primas. Se presentan varias posibilidades de seleccion de materias primas para dar la correcta composicion de mosto. Se da especial atencion a la oportunidad de usar bien definidas, materias primas mas baratas en combinacion con la mezcla a medida de enzimas para cerveceria. Se daran ejemplos de pruebas a nivel industrial demonstrando que cerveza de alta calidad puede ser elaborada utilizando malta menosmodificada que es mas barata.
