Use of a Vibrating Membrane Filter for the Recovery of Beer from Surplus Yeast

Abstract
A number of possible methods, including a variety of membrane filtration devices and centrifugation equipment, can be considered for the recovery of beer from spent yeast. The benefit of performing an operation on the spent yeast is twofold: the beer can be recovered and reintroduced into the process and the concentrated waste yeast can be sold, possibly as food by-product. If the waste yeast is not sellable, there is still a benefit in the reduction of the volume of the waste material, since the operation involves concentration of the yeast. The major focus of this paper is the usage of a membrane filtration system that employs vibrational energy at the membrane surface. The system differs from traditional cross flow filtration systems in that the shear at the membrane surface is generated mechanically (by vibrational energy) and not from high flows at the membrane surface. The device requires a low energy input and minimal fluid recirculation; these design benefits can help to reduce potential damage to the yeast cells that often results in negative taste attributes. Trials have been performed on spent yeast with the PallSep system in Europe, North America and Australia with favorable taste and scale-up design results. A summary of the international findings is presented with implications for system design.

Un numero de metodos posibles, incluyendo una variedad de dispositivos de filtracion de membrana y equipos de centrifugacion, pueden ser considerados para la recuperacion de cerveza de la levadura utilizada. El beneficio de realizar una operacion en la levadura utilizada tiene dos caras: la cerveca puede ser recuperada e introducida en el proceso y la levadura recuperada concentrada puede ser vendida, posiblemente como subproducto alimenticio. Si ]a levadura de desecho no puede ser vendida, todavia hay un beneficio en la reduccion del volumen del material de desecho, ya que la operacion comprende la concentracion de la levadura. El principal enfoque de esta. presentacion es el uso, de un sistema de filtracion de membrana que utiliza energia vibratoria en la superficie de la membrana. El sistema se diferencia de los sistemas tradicionales de filtracion por flujos contratios en que las fuerzas en la superficie de la membrana es generada mecanicamente (por la energia de vibracion) y no por altos flujos en la superficie de la membrana. El aparato requiere de poca energia y minima recirculacion de flujo; estos beneficios de disefio pueden ayudar a reducir dafio potencial a la celulas de la levadura que frecuentemente resultan en atributos negativos de sabor. Se han becho enzayos en el sisterna PallSep en Europa, Norte America y Australia con resultados favorables de sabor y de disetio de mayor escala. Se presenta un resumen de los encuentros internacionales con las implicaciones para el diseho del sistema.
