Modern Overall Control Systems in Malting Plants

Abstract
Batch production processes used in malting plants, breweries and other companies in the food industry require a special control system with wide ranging and integrated functions including planning, batch control, maintenance, quality assurance, online monitoring and reporting. It is also necessary to integrate and connect these functions to the financial, sales, and controlling system used in management and administration. All the process, transport, machine, maintenance and laboratory data are recorded in a modern SQL?data base which makes it easily possible to evaluate this integration. This paper shows a concept for such an integrated system with examples picked out from a German malting plant.

Los procesos de produccion por lote usados en malterias, cervecerias y otras compa�ias en la industria de alimentos requieren de un sistema de control especial con una amplia gama y funciones integradas incluyendo planificacion, control de lote, mantenimiento, aseguramiento de calidad, monitoreo en linea, y reportes. Es tambien necesario integrar y conectar estas funciones al sistema financiero, de ventas y de control utilizado en gerencia y administracion. Toda la informacion de los procesos, transporte, maquinas, mantenimiento y laboratorio esta grabada en la moderna base de datos SQL lo que hace facilmente posible el evaular su intemacion. La dis~ ertacion demuestra un concepto para tal sistema integrado con ejemplos sacados de una malteria alemana.
