Polyclar(r) (PVPP) For Improving Shelf Life in Laboratory Treated Lagers

Abstract
This study was under taken to generate systematic treatment data (dose response) for colloidal stabilization enhancement (shelf life) of commercial beer when treated with Polyclar(r). Samples of lager beers were treated with increasing dosages of two different forms of Polyclar(r) (Polyclar 10 and Super R.) at a contact time of a minimum of 15 minutes. Polyclar 10(r) is a non regenerative version of cross linked polyvinyl pyrrolidone. Polyclar Super R(r) is a regenerative form of cross linked polyvinyl pyrrolidone. Both Polyclar 10(r) and PolyclarSuper R(r) are insoluble adsorbents approved for the treatment of beverages. The following parameters were monitored for the samples of commercial beer tested before and after treatment: Total polyphenol, flavanoids, tannoids, ammonium sulfate titre, and reducing power. Aging test was performed to determine the predicted shelf life. Samples were stored at 37 deg. C fora period of six weeks. During this period total haze was monitored periodically at one week intervals. The results showed that all Polyclar(r) treatments enhanced shelf life of lager beers. Treatment with Polyclar 10 at higher doses produced significant enhancement of the computed shelf life (seven fold), whereas treatment with Super R at equivalent dose produced a four fold increase in predicted shelflife. Beer treated with Polyclar(r) at high dose removed up to 45% of the initial levels of total polyphenols and flavanoids. During the aging process, beers that had not been treated with Polyclar(r)showed a decrease in flavanoids and polyphenols. There was a corresponding increase in tannoids, and similarly an increase in the measured total haze. In contrast, beer treated with high dose Polyclar(r), showed an insignificant change in the levels of polyphenols, flavanoids and tannoids from the irinitial values after treatment. A working model based on specific adsorption of polyphenols by Polyclar(r)is provided to explain the experimental results. The Polyclar(r) treatment can be optimized to suit pilot plant and commercial conditions for treatment of different types of beer for increased colloidal stabilization and shelf life.

Muestras de cervezas lager fueron tratadas condosis incrementales de dos tipos distintos de Policlar (Policlar 10 y SuperR) en un tiempo de contacto de minimo 15 minutos. Policlar 10 es una versionno regenerativa de un polivinil pyrrolidone compuesto. Policlar Super Res una version regenerativa del mismo. Tanto policlar 10 como Policlar SuperR son absorbentes insolubles aprobados para el tratamiento de bebidas. Los siguientes parametros fueron monitoreados para las muestras de cervezacomercial testeada antes y despues del tratamiento: polifenoles totales,flavanoides, taninos, titrato de sulfato de amonio, y reductor de poder.Las pruebas de envejecimiento fueron realizadas para determinar la prediccionde vida util. Las muestras se sometieron a 37C por un periodo de 6semanas. Durante es periodo se monitoreo semanalmente la turbidez total. Los resultados demonstraron que todos los tratamientos con Policlar mejoraronla vida util de las cervezas. Tratamiento con Policlar 10 en dosis mas altasdio mejoras significativas de vida util (7 veces), mientras que tratamientocon Super R en dosis equivalentes produjeron un incremento de cuatro vecesla vida util estimada. La cerveza tratada con Policlar en dosis alta removiohasta un 45% de los niveles iniciales de polifenoles y flavanoides. Durante el proceso de envejecimiento, las cervezas que no fueron tratadascon Policlar, mostraton cambios insignificativos en los niveles de polifenoles,flavanoides y taninos de sus niveles iniciales luego de tratarlos. Un modelo de trabajo basado en absorcion especifica de polifenoles porPoliclar es presentado para explicar los resultados experimentales. El tratamientocon Policlar puede ser optimizado para encajar a condiciones de planta pilotoasi como para condiciones comerciales de tratamiento para distintos tiposde cervezas para incrementar la estabilidad coloidal y vida util.
