Abstract
The effects on the US brewing industry of legislation passed in 1990 to amend the Federal Clean Air Act 1970 are discussed. The results of a survey of emissions of particulate matter and volatile organic compounds from the brewhouse, wort treatment, fermentation, maturation, matured beer treatment, packaging, the storage and treatment of surplus yeast, waste beer and spent grains, and effluent treatment in a commercial brewery are presented, showing that all these processes generate significant quantities of substances covered by the amended act (wort vapours, carbon dioxide, ethanol vapour, etc.) which must be prevented from entering the atmosphere in order to comply with the law.
