Sensory analysis of beer flavor.

Taste panels at the University of California have related beer bitterness to both beer IBUs and storage conditions. But statistical analysis of the data showed that while sensory bitterness and IBUs both decreased with time of storage, sensory bitterness was unchanged at increased storage temperatures although the IBUs decreased. This can probably be accounted for by the increase in bitter aftertaste which occurs with increased storage temperature. It was also found that temperature of storage had an important effect on numerous aroma changes in beer.
