Abstract
The vision of the Master Brewers is to be the globally recognized knowledge authority in brewing science, technology, and operations—dedicated to the concept of United We Brew™. This quarter we have some interesting articles to share. “Monitoring Brettanomyces Concentration, Viability, and Pseudohyphae Percentage During Propagation and Fermentation Using the Cellometer X2 Image Cytometer” from Martyniak et al. will be helpful for breweries producing Brettanomyces beers. Next, we have a paper on the value of turbid worts from a novel lautering system, titled “Influence of Altered Wort Composition on Selected Parameters of Fermentation,” by Oehlschlaeger et al. This is one of the best papers I have seen in a while. The third paper is a novel look at the protease activity of lactobacillus, titled “Microbial Gluten Reduction in Beer Using Lactic Acid Bacteria and Standard Process Methods,” by Taubman et al. Finally, we have a special interview with Dr. Ludwig Narziss, in which he shares a bit of his history in brewing and some interesting technical information on his favorite beers.​
