In this seminar we will be discussing recipe development and brewing techniques for creating high quality dark and malty beers. We will cover a range of traditional styles ranging from Brown Ales to Stouts. Topics include: malt selection when designing a recipe; choosing hops and hitting your IBU target; controlling your water chemistry and balancing acidity; brewing techniques and processes; maintaining drinkability and creating dark beers that appeal to a large audience; analyzing your final product and making adjustments over time.

Ryan is the co-founder and head brewer of Wild Fields Brewhouse in Atascadero, CA. Before opening this business, he honed his craft at Lost Abbey/Port Brewing, Pizza Port San Clemente and Beachwood Blendery. Wild Fields has made a name for itself by creating world-class dark and malty beers, and in 2022 was awarded four gold medals at the World Beer Cup, and three gold medals at the Great American Beer Festival. Six of those medals were for three beers that won twice, including English Brown, American Brown, and Scottish Ale. Wild Fields has also been awarded at both competitions in the Oatmeal Stout category. Ryan’s brewing style is a blend of science and art, and he has a passion for creating traditional styles in unique ways.
