Abstract
Citra (brand HBC 394) is a new special aroma hop variety with unique and
highly favored flavor characteristics. Citra was developed and released by
the Hop Breeding Company LLC (HBC) and is protected by a U.S. plant patent
application (“Hop Plant Named ‘HBC 394’”). As the name Citra suggests, its
flavor descriptors include the citrus fruits grapefruit and lime. It has
also been ascribed characteristics of gooseberry, passion fruit, lychee,
and sauvignon blanc wine. Citra has an impressive pedigree that includes
the well-established and -respected hop varieties Hallertauer Mittelfrueh,
U.S. Tettnanger, Brewers Gold, and East Kent Golding. Citra is a truly
unique aroma hop variety that has the added benefit of a high
alpha-acids content of approx. 12%. To date, flavor
testing of beer brewed with Citra, both at pilot and commercial scales,
has resulted in an enthusiastic response from brewers and tasters, and the
future of this new hop variety looks promising.

Síntesis
Citra (marca HBC 394) es una variedad nueva
especial de lúpulo tipo aroma con características únicas muy apreciadas
de sabor y aroma (“flavor”). Citra fue desarrollado
y presentado por la Hop Breeding Company LLC (HBC) y es protegido por una
aplicación de patente U.S. de planta (“Hop Plant Named ‘HBC 394’”).
Así como lo sugiere su nombre, se describe su “flavor,”
entre otras cosas, como el de las frutas cítricas lima y toronja. También
se le atribuye características de grosella, parchita, lichee, y vino.
Citra posee un pedigrí impresionante que incluye
las bien establecidas y respetadas variedades Hallertauer Mittelfruh, U.S.
Tettnanger, Brewers Gold, y East Kent Holding. Citra es realmente una
variedad de lúpulo tipo aroma única, puesto que tiene el beneficio
adicional de un alto contenido de ácidos alfa (m.o.m. 12%).
Las pruebas sensoriales de cervezas elaboradas con
Citra, tanto en escala planta piloto como comercial, han resultado en una
respuesta entusiasta tanto del panel como de cerveceros, por lo que el
futuro de este lúpulo es muy pro-metedor.
