Influence of Variety and Malting Period on alpha- and beta-Amylases in Different Nigerian Maize Cultivars

Abstract
The presence of alpha- and beta-amylases in maize malt from 100 Nigerian
maize cultivars was investigated on days 3 and 5 of germination. The results
obtained showed that malt amylase activity was markedly (P < 0.05)
influenced by number of days of germination and type of cultivar. In this study
maize cultivars SPMAT, TZBRSYN-Y, MAKA-SRBC(5), 4001STR, TZECOMP(4)C(2), and
TZEE*TZEE-W*DEMARSCUS*TZEE-W were higher in both alpha- and beta-amylases
compared with the other studied cultivars. Thus, any of these cultivars could be
chosen for use in food and allied applications to exploit the diastatic power
provided by their alpha- and beta-amylase activities.

La presencia de alfa- y beta-amilasa en ma�z malteado de 100
variedades de ma�z de Nigeria fue estudiada al tercer y quinto d�a de
germinaci�n. Los resultados obtenidos demostraron que la actividad de
amilasa fue marcadamente (P
< 0,05) influenciada por el n�mero de d�as de germinaci�n y por la
variedad del ma�z. Las variedades de ma�z SPMAT, TZBRSYN-Y, MAKA-SRBC(5),
4001STR, TZECOMP(4)C(2), y TZEE*TZEE-W*DEMARSCUS*TZEE-W tuvieron, en este
estudio, valores m�s altos de alfa- y de beta-amilasa en comparaci�n con
las otras variedades estudiadas. Cualquier de estas seis variedades
podr�an ser utilizadas en aplicaciones alimenticias o similares para
aprovechar la potencia diast�tica de su actividad de alfa- y beta-amilasa.
