Extract Development in Malting Sorghum

Abstract
Cold water extract (CWE) and hot water extract (HWE) were monitored at
various times during steeping and germination, and a modification index was
evaluated during germination of three sorghum varieties: ICSV400, SK5912, and
KSV8. For varieties ICSV400 and SK5912, optimum CWE values were achieved after
40 h of steeping, while that of variety KSV8 occurred after 45 h. The range of
highest CWE values (38.3�43.3%) obtained for the three sorghum varieties during
germination more than doubled the recommended values of 18�20% for well-modified
barley malts. Steeping and moisture content significantly (P < 0.001)
affected CWE development, while variety had no significant effect. Optimum
values for HWE in both ICSV400 and SK5912 also occurred after 40 h of steeping,
while that of KSV8 occurred after 45 h. Variety and steeping time significantly
affected HWE development at P < 0.01 and < 0.001, respectively, and a
nonsignificant correlation existed between HWE and moisture content for all of
the sorghum varieties during steeping. The highest HWE values for varieties KSV8
and ICSV400 (359 and 354 �L/kg, respectively) were recorded on day 8, the final
day of germination. The HWE values were not only the highest recorded in any
sorghum variety to date, but their occurrence on the final day of germination
suggested that the pattern of extract development in sorghum malts is distinct
from the pattern of development of other sorghum modification indicators, which
optimized on day 5 and declined thereafter. Variety and germination time highly
significantly (P < 0.001) affected HWE development. Generally, the high
extract values (CWE and HWE) recorded in this study were attributed to the use
of cysteine hydrochloride (Cyst.HCl) as an extractant, which suggests that
extract yield in some sorghum malt varieties could be higher than those of
barley malt if proper extraction procedures were adopted. In addition, low
values (<5 �L/kg) for fine�coarse extract difference consistently occurred in
all sorghum malts between days 5 and 8 of germination, suggesting optimum
modification at these time intervals.

El extracto en agua fr�a (CWE) y el extracto en agua caliente (HWE) fueron
medidos a diferentes tiempos de remojo y germinaci�n para tres variedades de
sorgo (ICSV400, SK5912, y KSV8) para evaluar sus �ndices de modificaci�n. Los
valores �ptimos del CWE para las variedades ICSV400 y SK5912 se alcanzaron
despu�s de 40 h de remojo, mientras para KSV8 esto ocurri� a 45 h. El rango de
los valores CWE m�s alto conseguido (38.3�43.3%) para las tres variedades de
sorgo durante la germinaci�n m�s que duplic� los valores recomendados (18�20%)
para maltas de cebada bien modificadas. El remojo y el contenido de humedad
afectaron el desarrollo del CWE de manera significativa (P < 0.001),
mientras que la variedad no tuvo ning�n efecto significativo. Los valores
�ptimos del HWE para las variedades ICSV400 y SK5912 tambi�n se alcanzaron
despu�s de 40 h de remojo, con el de KSV8 ocurriendo a los 45 h. Tanto la
variedad (P < 0.01) como el tiempo de remojo (P < 0.001) afect�
significativamente el desarrollo del HWE, mientras que la correlaci�n entre HWE
y contenido de humedad no fue significativa para ninguno de las variedades
durante el remojo. Los valores m�s altos para el HWE para KSV8 y ICSV400 (359 y
354 �L/kg, respectivamente) se registraron en el d�a 8, el �ltimo d�a de la
germinaci�n. No s�lo eran estos los valores de HWE m�s altos registrados para
cualquier variedad de sorgo hasta la fecha, sino que el hecho de registrarse en
el �ltimo d�a de la germinaci�n sugiere que el patr�n del desarrollo del
extracto en maltas de sorgo difiere notablemente de otros indicadores de
modificaci�n de sorgo, que alcanzaron su punto �ptimo a los 5 d�as, bajando en
los d�as subsiguientes. La variedad y el tiempo de germinaci�n afectaron el
desarrollo del HWE muy significativamente (P < 0.001). Los altos valores
de extracto (tanto CWE como HWE) registrados en este estudio generalmente fueron
atribuidos al uso de hidrocloruro de cisteina como soluci�n extractante. Esto
sugiere que el rendimiento de extracto de algunas variedades de malta de sorgo
podr�a ser mayor que el de cebada malteada con tal de adoptar procedimientos de
extracci�n apropiados. Vale notar que se obtuvieron valores bajos (<5 �L/kg)
para la diferencia de extracto fino-grueso para todas las maltas de sorgo entre
los d�as 5 y 8 de la germinaci�n, lo que sugiere que se tiene una modificaci�n
�ptima en estos intervalos de tiempo.
