Abstract
The SASPL (saturated ammonium sulfate precipitation limit) test
frequently is used to evaluate beer colloidal stabilizers for their
ability to stabilize a beer against the formation of a colloidal haze with
aging. The test has several drawbacks, however. The lack of specificity of
the test to haze proteins is demonstrated by comparing dose-response
curves when the response is measured by SASPL versus heat-forced total
haze. The SASPL test clearly responds to other beer components. This lack
of specificity causes the SASPL test to sometimes give false indications
of beer colloidal stability, depending on stabilizer and dose. Several
factors affecting the test can cause it to give an indefinite breakpoint,
which introduces a degree of subjectivity into the readings. A quicker,
simpler, alternative test using a single dose of ammonium sulfate is
recommended to determine whether the beer has been stabilized.
Quantitative evaluation of colloidal stabilizers, on the other hand,
should be made by either heat-forcing or measuring the actual shelf life
of carefully treated beer samples.

La prueba del l�mite de precipitaci�n de sulfato de amonio saturado
(SASPL) es frecuentemente utilizado para evaluar la capacidad de
estabilizadores para estabilizar una cerveza contra la formaci�n de una
turbieza coloidal con el tiempo. Esta prueba tiene varios puntos d�biles.
Se puede demostrar su falta de especificidad como prueba de prote�nas
formadores de turbieza al comparar las curvas de respuesta a aumentos de
dosificaci�n, al comparar la respuesta por SASPL a la de la turbieza total
efectuada por calor. La prueba SASPL obviamente es afectada por otros
componentes de la cerveza. Esta falta de especificidad hace que la prueba
SASPL a veces da una falsa indicaci�n de la estabilidad coloidal de una
cerveza, dependiendo del estabilizador utilizado y su dosificaci�n.
Existen varios factores que hacen que la prueba resulta en un punto de
quiebra poco definida, introduciendo un grado de subjetividad a las
lecturas. Se recomienda una prueba alternativa m�s r�pida y sencilla,
utilizando una �nica dosificaci�n de sulfato de amonio para determinar si
la cerveza ha sido estabilizada. Por otra parte, la evaluaci�n
cuantitativa de estabilizadores coloidales deber�a realizarse mediante
pruebas forzadas con calor o con pruebas de almacenaje de muestras
cuidadosamente tratadas.
