The Benefits of Washing Barley with Hot Water: A Preliminary Study

Abstract
Short washes with hot water of prerinsed grain, even at 100�C for 5 s, can accelerate the germination of barley, which is more friable after a fixed germination period and drying. Washes with cool water are also beneficial, but less so than are hot washes. Short, hot washes can reduce the fungal load on grains. The important implications of these preliminary findings for malt quality (homogeneity, gushing, flavor, and mycotoxins) are discussed.

S�ntesis
Lavados cortos con agua caliente de granos pre-enjuagados (aun por 5 s a 100�C) pueden acelerar la germinaci�n de cebada; es m�s friable despu�s de un periodo de germinaci�n fijo y secado. Lavados con agua fresca tambi�n ayudan, pero son menos eficaces que con agua caliente. Lavados cortos calientes pueden reducir la cantidad de hongos en los granos. Se comentan las implicaciones que tienen estos resultados preliminares sobre la calidad de la malta (homogeneidad, micotoxinas, salvajismo y efectos sensoriales de la cerveza).
