Abstract
Globalization of brands and concentration of brewing sites requires fewer breweries to produce an ever increasing diversity of beers as well as high volumes. This paper describes how a UK brewery recently upgraded its twin stream rapid batch brewhouse built by Balfour over 25 years ago. Renovation of the 8.5m diameter lauter tuns, conversion to external wort boilers, and automated batch process control have ensured high wort quality, consistent 2.4 hour cycle time (10 brews/day/stream), >98.5% extract recovery to fernenting vessel and reduced operating costs, with over 20 different wort types.

La globalizaci6n de marcas y la concentraci6n de lugares para la elaboracion de la cerveza requiere que menos cervecerfas produzcan una mayor diversidad de cervezas asf como tambi6n volumenes mayores. Este documento describe como una cervecerfa del Reino Unido recientemente, modemizo su casa cervecera de rapida remesa gemela construida por Balfour hace mas de 25 anos. La renovacion de las tinas de fermentacion de 8.5m, la conversion de los calentadores externos de mosto y el control del proceso de rentesas automatico han asegurado una alta calidad de mosto, ciclos de tiempo consistentes de 2.4 horas (10 fermentaciones/dia/serie), mas del 98.5% de recuperacion del extracto de los recipientes de fermentaci6n y costos de operacion reducidos, con mas de 20 tipos de mosto diferentes.
