A Critical Assessment of Malt Analysis from the Brewer's Perspective

Abstract
There are only two reasons to set analytical specifications for malt: to answer the question (a) is the malt of the quality I agreed with the maltster? (b) do I have some useful information that will help me control my process better? The brewer should accept the challenges presented by barley being a vegetative system and therefore prone to inhomogencity. The maltster and brewer need to work as a team to minimize the extent to which inhomogeneity impacts. The maltsters should be critical during the selection of barley in respect of parameters such as germinative properties and endosperm characteristics and should malt grain in a manner which reflects its physiological status. The brewer with modern flexible plant has the wherewithal to configure brewhouse operations to minimize the effect of inevitable batch to batch differences in malt supply. The items included in the analytical specifications for malt must be logical, fewest possible in number and the parameters should be mutually compatible and individually informative. For a malt destined as 70%+ of a mash, the simplest and most informative specification would include variety, modification and homogeneity (by friabilimeter), moisture, total nitrogen, total -glucan, extract, filterability, free amino nitrogen, nitrogen, viscosity, color, flocculation test, nitrosamines, freedom from taints, minimum storage time and, for lager malt only, S-methylmethonine.

Sintesis
Hay solamente dos razones para poner especificaciones analiticas a la malta: para responder a las preguntas (a) es la malta de la calidad con la que acorde con el maltero? (b) tengo alguna informacion de utilidad para mi que me ayudara a controlar mi proceso mejor? El cervecero debe aceptar los retos presentados por la cebada al ser un sistema vegetativo y por to tanto con tendencia a in-homogeneidad. El maltero y el cervecero necesitan trabajar como un equipo para minimizar la extension en que afecta esta in-homogeneidad. El maltero debe ser critico durante el proceso de seleccion de la cebada con respecto a los parametros de tales como propiedades germinativas y caracteristicas del endoesperma y debe maltear at grano en una forma que refleja su estado fisiologico. El cervecero con una cerveceria modema y flexible tiene las herramientas para configurar sus operationes de la casa de cocirmento para minimizar el efecto de variaciones inevitables de lote a lote del surninistro mde malta. Los puntos incluidos en las especificaciones analiticas de la malta deben ser logicas, las menores posibles en numero y los parametros deben ser mutuamente compatibles e individualmente informativos. Para una malta destinada a ser 70%+ de la coccion, la especificacion mas simple e informativa debe incluir variedad, modificacion y homogeneidad (por friabilimentro), humedad, nitrogeno total, beta glucano total, extracto, facilidad de filtracion, amino nitrogeno libre, azucares, visosidad, color, test, de floculacion, nitrosammos, libre de taninos, tiempo minimo de almacenamiento, y para malta lager unicamente, S-metilmetionina.
