Abstract
The report of the proceedings of the convention of the United States Brewmasters' Association (now the Master Brewers' Association of the Americas) held in Chicago in March 1887, is one of a series of important papers from the past reprinted under the heading "Brewing: have things changed so much?". In general, the matters discussed at that meeting were those which still concern brewers today, but one major difference is that in those days, because the vast majority of brewers in the USA were German by birth or parentage, German was the official language of the association and the original text of this paper was therefore largely in German.
