Abstract
This is the first in a series of reprints of papers illustrating the state of the brewing industry and of brewing science in past decades, under the heading "Brewing: have things changed so much?" Originally presented at the MBAA Convention in November 1957, this paper describes the principles of sedimentation, filtration, centrifugation and adsorption and their applications in the brewing process, including trub precipitation, yeast flocculation and settling, lautering, beer filtration, and the centrifugal clarification of wort and beer. The possibility of mashing dehusked malt flour is also discussed.
