Abstract
From over 50 years' experience in the industry, the author has chosen the following topics in brewing which he considers in need of surveillance and improvement for discussion in his Award of Merit Lecture for 1989: brewery visitors, brewery floors, cellar processing waste; utilising more carbon dioxide; yeast the perfect employee; operations procedures manual; meetings and labour relations; noise and productivity; container filling operations and beer for the future.
