Abstract
The practical aspects of operating and maintaining a tunnel pasteuriser are reviewed with the objective of uniform pasteurisation with minimal costs of refrigeration, steam, water, water treatment, chemicals and product loss. To ensure consistent operation, spray water flow, temperature and product residence time need to be controlled. The set up is described of monitoring sump water level, water flow, temperature and set point adjustments, prevention of glass scale, slime build up and modifications of pasteurisers to increase capacity.
