Abstract
Multivariate analyses such as the analysis of principal components of variance and factorial discriminant analysis have been used to reduce the number of variables under consideration and to define the parameters which are most discriminant for the organoleptic qualities of beer. The same group of significant analytical factors are observed each year in barley and malt but their order of importance varies. From a knowledge of the key analytical parameters of barley and malt, it is possible to predict the organoleptic qualities of beers obtained from them.
