The impact of r&d on brewery design.

Abstract
Examples are presented to illustrate the role played by the laboratory in improving brewing processes e.g. difficult beer filtration resulting from excessive mash agitation, hazy beers caused by rapid loss of alpha amylase activity, the role played by oxygen and zinc in fermentation, and the positions of the cooling jackets on cylindroconical fermenters.
