Abstract
This paper describes a completely automatic kettle control sytem with a new concept of controlling vigorous boiling based on measuring wort velocity as a function of temperature. The heating surfaces become operational during filling of the kettle with wort as a function of level. The control instrumentation throttles the steam valves to control and maintain both boiling and vigorous boiling. Failsafe features close the steam valves in the event of power or air failure. In the event of excessive overboil, a detector closes the steam valves.
