Abstract
Discussion of why inefficient draught beer production and declining draught beer sales are allowed to continue when freshly drawn tap beer is the greatest single quality characteristic desired by the consumer. Only by a concentrated effort on the part of the brewing industry and the individual brewer to combat this apathy can the tide be turned. Each brewer must "fish or cut bait," if he is to compete and survive in the draught beer business. He must analyze his entire keg processing operation and make concrete plans immediately to attain his own optimum system with the aid of experienced kegging equipment specialists.
