President's Message |

I am just back from attending the MBAA District Ontario One-Day Technical Conference; once again a very successful meeting with great presentations, educational opportunities, and increased attendance over last year. This district continues to attract new members and remains active all year; the local executive is to be commended. I must admit a fondness for this district, as I was a member of MBAA District Ontario for close to 15 years of my 30 in the industry.
MBAA is very unique in that we do have local districts that are very active in holding their own meetings, allowing those that may not be able to attend the Annual Conference an opportunity to network with their peers as well as attend workshops and technical presentations. It is because of this structure that MBAA is one of the few world brewing organizations that continues to grow and flourish.
In talking to the executive of MBAA District Ontario last week, I came to realize that even successful districts are struggling with getting our members to step up and volunteer to sit on and chair committees. Our organization is built on volunteers, and without people stepping up, these great conferences and workshops would not be possible. I know that the industry has changed such that we are all very busy at work without time during a normal week to work on volunteer activities, and that sometimes your employer may not support your work with MBAA. The opportunities to network as well as the opportunity to manage in a different environment will aid you in both your professional and personal life. So get involved, join a committee, and if asked, don't be afraid to step up and chair that committee in the future.

Last month, we explored pale ale malt, a popular specialty
base malt with rich, malty, toasted flavors. This month, we'll take a look at Vienna
malt, an interesting specialty base malt nestled between the
pale ale and Munich styles of malt. Typical enzyme and color levels are:

Named for its area of origin, Vienna malt was used by Anton Dreher who is credited with revolutionizing brewing in Vienna in the 1800s after introducing lager brewing into his family brewery.

The American Hop Grower
I just returned from attending and presenting at the American Hop Growers Convention in Phoenix, AZ. This is about as far from the American hop farms as you can get, but a lot warmer place to hold a convention this time of year! There was a strong turnout for the gathering from vendors who cater to the growers and hop processors/marketers and a group of craft brewers interested in working with the growers to preserve quality standards.

Knowing the flow of conversation in our local haunt, I would have expected at least a few confused e-mails regarding a brewer's method to
"dry hops." What a little difference an
"s" can make. Nevertheless, Larry from Standing
Stone Brewing Co. in Ashland, OR, braved an e-mail
to the Ponderous Pint on how they do things out
there in the Beaver State. They run a double assault
on their double IPA. First, they dump hop pellets through the CIP port on top of the tank after primary fermentation and rouse them with CO2 after a few days. The next step might be a little trickier for those packaging; they then transfer to a serving tank complete with a hop
"tea" bag. From its online fans, I dare say a trip to Ashland sounds delicious.

Kicks Off 2011 |

District St. Louis kicked off the winter dinner meeting season on Thursday, January 20, with our sponsor, Anheuser-Busch, hosting the January meeting,
which featured a beer and food pairing event and style discussion led by MBAA Past President George Reisch in the Anheuser-Busch Corporate Theatre. This was an encore performance in response to the popularity of George's first pairing event.

District St. Louis Heads for the Highlands |

MBAA
District St. Louis is headed to the Highlands Brewing Company for our February meeting on Thursday, February 17, starting at 5
p.m. We would like to thank the Highlands folks for not only hosting our evening at their brewery in Kirkwood, MO, but also for sponsoring the meeting. Our evening presentation will be on utilities considerations in breweries, large and small.
One new feature of MBAA District St. Louis dinner meetings in the 2010-2011 year was implemented by Board Member Brad Miller who has arranged all six
district dinner meetings to be held at breweries! This has added considerably to the atmosphere and discussion at our events.

District Western New
York Meeting |

MBAA
District Western New York held a meeting on January 26 at Custom Brewcrafter's in Honeoye Falls, NY.
Our host, Jason Fox, served up some of his finest ales for hospitality. A tour of their brewery was followed by a tour and discussion on their new waste water treatment facility. All were impressed with Custom Brewcrafter's new brewery. A delicious dinner was served at the brewery. The next meeting will be in March. Additional details to follow from

Paul/Minneapolis Upcoming Meeting |

MBAA
District St. Paul/Minneapolis would like to announce their next meeting to be held Wednesday, February 9, 2011, at Town Hall Brewery in Minneapolis. The business meeting will be held from 5-5:30 followed by a presentation by Peter Rifakes on the expansion of his
brewery. The presentation will be followed by social time and a
taco bar for dinner. Cost for the meeting is $20 and RSVPs should be directed to
Eric Harper no later than Friday, February 4, 2011. We look forward to a fun-filled evening with many of our members present.

Glycol System
Health Check-Up |
|
Undoubtably, prevention of chiller fluid-side freezing is a driving factor for assuring proper glycol concentration. And, it is easy with a field refractometer to check glycol percentage/fluid freeze point.
However, there is more to full preparedness than simply testing for freeze protection. Just having the glycol concentration and figuring that is enough is like going to the doctor's office for a physical, and the doctor telling you
"Well, you're not bleeding anywhere, so you'll be
fine until next year."
A quality glycol fluid analysis performed in a laboratory tests 10-15 important system fluid parameters.

In Memoriam |

Sadly, we must report the passing of MBAA member
Oscar E. Heintz on December 12, 2009 (MBAA District
Milwaukee). Oscar joined MBAA in 1963.
MBAA member Francis J. Weber passed away on December
19, 2010 (MBAA District St. Paul/Minneapolis). Francis joined MBAA in 1954.

John Robert Piening passed into eternal life on January 18, 2011. John joined ASBC in 1946 and served as president from 1968 to 1969. He began his career with the Burger Brewing Co. (Cincinnati, OH) in 1946. He served in various duties in MBAA District Cincinnati, including as district president. He was elected president of ASBC in 1968. He went to work for Schoenling Brewing (Cincinnati, OH) in 1974 after Burger had closed; he retired in 1983. John was 92 years old at the time of his passing.
He was preceded in death by his beloved wife Mary and dear sons Robert and Michael. He is survived by his children Suzanne (Michael) Mulhern, Mary Catherine (William) Beyer, Donald (Carla), John (Eileen), Sarah (Robert) Furia, Joanne (John) Scott, and daughter-in-law Donna. He is also survived by numerous grandchildren and great-grandchildren and his sister Mary Merland.
