"The Effect of Beer pH on Colloidal Stability and Stabilization - A Review and Recent Findings," by Karl J. Siebert,
has been published in the MBAA
Technical Quarterly.
Abstract
pH has a pronounced effect on the amount of haze produced in both model systems and beer from the same amounts of haze-active (HA) proteins and HA polyphenols. The greatest haze intensity is seen slightly above pH 4 and varies slightly with alcohol content. This pH promotes removal of HA material during maturation, resulting in better beer colloidal stability. Fining with HA proteins (gelatin or isinglass) or HA polyphenols (e.g., tannic acid) is similarly affected by pH, with the greatest effectiveness near pH 4.3. Factors that influence beer pH are reviewed for their effects on colloidal stability. Under low adsorbent dose conditions, both silica and PVPP are slightly less effective at the pH at which proteins bind polyphenols most strongly. This appears to be due to competition between a stronger protein-polyphenol interaction and binding of HA material to an adsorbent.

Technical Director's Report to the MBAA Board of Governors - June 2010 |

Technical Quarterly Papers. I have been preaching these past several years of my concern that most of the presenters at our conventions (including the WBC) are not bothering to publish their work in the
TQ, as noted in the following percentages: 28% of the Nashville presentations were published, and 38% of the WBC presentations will have been published (40 of 104). I recently recontacted those La Quinta convention presenters who either have not responded to or have not committed to our requests that they prepare their presentations for publication in the
TQ. To date, we have published only 8 of the 65 La Quinta presentations (12%). I am contacting all of the Providence presenters prior to the start of the convention, reminding them that it is important that they take the time and effort to prepare their presentation for publication in the
TQ and offering them any assistance needed. I hear over and over that it just takes too long to prepare a scientific paper. Perhaps it's time that we take a different approach to the publishing problem.

District Western New York Holds Meeting at Brewery Ommegang |
|
Brewery Ommegang, located in beautiful and historic Cooperstown, NY, was the site of the MBAA District Western New York meeting held on Friday, May 21. Cooperstown is also home to the Baseball Hall of Fame and Museum. Our host, Phil Leinhart gave a presentation on "Bottle Conditioning at Brewery Ommegang Now and ??." A delicious dinner was served outside under a tent - a treat for all who attended! Our next meeting will be held in September; the venue and date will be announced.
