New Technical Quarterly Paper Published

"Effect of Boiling Parameters on the Ratio of trans-Iso-a-acids and cis-Iso-a-acids in Wort," by Chunfeng Liu, Mingping Zong, Jianjun Dong, Feiyun Zheng, Yongxian Li, Qi Li, and Guoxian Gu, has been published in the MBAA Technical Quarterly.

 
Abstract
This paper presents a detailed study on the effect of boiling conditions on the ratio of hop a-acids isomerization. High-performance liquid chromatography analysis indicated that increasing boiling time resulted in a more favorable formation of trans-iso-a-acids than of cis-iso-a-acids. With the addition of the same quantity of a-acids, when the boiling time was longer, hop utilization was higher. The results show that boiling conditions, including time, wort pH, original wort gravity, etc., can play an important role in the conversion of hop a-acids to iso-a-acids.
